I got this idea from this Rainbow Cake Tutorial.
I used standard white cake mix and gel food coloring. I mixed the batter per the box instructions and then separated the batter into 3 bowls. I left the white as is, and colored the other two with the gel food coloring. It took A LOT of gel to get this color. I really wanted it to be even darker.
I was trying for a sloppy marbled swirled effect. I think it came out well. I had fun trying different combinations and layers. Of course in the end they all taste wonderful.
I leave the cupcakes un-frosted and store them in a sealed plastic container. I bring them out one at a time for KC’s deserts. I use canned frosting, and let him pick out some sprinkles to decorate with.
To control the mess I put a small amount of the sprinkles into unused medicine cups and set them out on the table for KC. Usually he just dumps them all onto the cupcake and starts chowing down. Still, he enjoys it.
If/when I do this again, I may splurge on the really concentrated food coloring. I’d love to get a more ‘real’ Christmas red and green. Also, I’d mix up a double batch. I ran out of batter well before I ran out of enthusiasm. 😉
